A southern version of this dish is prepared and eaten in a slightly different way.

Method

  1. Slice lean pork into 5 x 4 cm strips and then across into thin slices. Marinate the slices well as above. Heat 1 tablespoon oil in a pan and stir-fry until done. Dish out on to a plate and sprinkle with roughly crushed roasted peanuts. Prepare Banh Hoi (Rice Noodle Cubes) to eat with this dish.
  2. Diners take a whole lettuce leaf from the Herb Salad Plate, place on one end a piece of noodle cake, a couple of pork slices, some pickled vegetable and some herbs, roll everything up into a cigar shape and dip it into the sauce as they eat.
  3. Bò Xào (Stir-fried Beef) may be eaten the same way.
