Ingredients

Quantity Ingredient
2 tablespoons oil
5 shallots, finely mashed
or 1 medium brown onion, finely chopped
2 garlic cloves, smashed and chopped
2-3 skinned tomatoes, finely chopped
pinch sugar
4 cups cooked white rice
1 cup chopped spring onion
salt and pepper, to taste
chopped coriander leaf, for garnish

Method

  1. Heat the oil and fry the shallots and the garlic until soft. Add the tomatoes and the sugar and cook until the mixture is thick. Add the cooked rice and mix thoroughly, then add the spring onion, salt and pepper and mix again. Serve onto a plate and garnish with coriander.
