Pear, walnut and stichelton inside a chicory leaf

Always quite nice to have something a little bit crunchy and healthy to go with a drink. This is a classic salad in a portable, pop-it-in style-y. Stichelton is a wonderful cheese made at the Welbeck Estate in Nottinghamshire by Joe Schneider using raw milk and natural rennet, and its flavours have a lot in common with Stilton – hence the name, which is said to be the 13th-century name for the village of Stilton. If you can’t get hold of Stichelton, feel free to use a good-quality Stilton.

Ingredients

2 heads chicory
50g walnut halves
2 pears
1 tablespoon sherry vinegar
3 tablespoons olive oil
90g stichelton
sea salt
black pepper

Method

  1. Preheat the oven to 180°C.
  2. Carefully separate the leaves of the chicory, discarding any bruised outer ones; some of the bigger leaves may be a little over-sized for this dainty little number, so I tend to save those for a green salad. Finely slice any middling ones and put in a bowl, ready to go inside the leaves with the pear and walnut mix. Arrange the smaller chicory leaves on a plate.
  3. Spread out the walnuts on a baking tray and toast in the oven for 5–6 minutes until golden. Remove from the oven and, while the walnuts are still warm, give them a gentle rub in kitchen paper or a clean tea towel to get rid of any loose skin, then chop them roughly and add to the bowl of sliced chicory. Peel and core the pears and cut them into bite-sized pieces and add to bowl as well.
  4. Dress with the sherry vinegar and olive oil, then crumble in the stichelton and mix everything together. Season to taste with salt and pepper, then spoon the filling into the leaves and serve straight away.
