Sri lankan egg fried rice

Ingredients

Quantity Ingredient
50g butter or ghee
2 leeks, finely sliced
1 red onion, finely sliced
2 garlic cloves, minced
5cm ginger, peeled and minced
2 eggs, beaten
240g cooked basmati rice
2-3 tablespoons soy sauce
pinch salt, or to taste

Method

  1. Heat the butter in a wok on a medium heat, then add the leeks and onion and stir-fry on a high heat for 5 minutes. Add the garlic and ginger and stir-fry for a further 2–3 minutes until the vegetables are softened.
  2. Add the eggs and stir-fry for 30 seconds until just scrambled, then add the rice. Stir-fry for 3–4 minutes until the rice is hot all the way through.
  3. Season with the soy sauce and salt to taste and serve hot.
