Ingredients

Quantity Ingredient
160g rice flour
140g gram flour
1/2 teaspoon salt
1/4 teaspoon chilli powder
1/4 teaspoon bicarbonate of soda
1 litre vegetable oil, For frying

Method

  1. Mix the flours, salt, chilli powder and bicarbonate of soda in a bowl. Gradually add 150ml water and bring together to form a dough.
  2. Heat the oil in a large wok to 180°C, making sure to fill it no more than half full.
  3. Transfer small sections of the dough to a murukku/ string hopper press using a star-shaped plate attachment, and carefully press out 2–3 circles of dough directly into the hot oil. Do not overfill the pan.
  4. Fry for 2–3 minutes until golden brown and crisp, then drain on a plate lined with kitchen paper. Repeat. Store in an airtight container for 3–4 days.
