Ingredients

Quantity Ingredient
1 onion, finely sliced
2 green chillies, deseeded and finely sliced
2 garlic cloves, finely sliced
10 curry leaves
1/2 teaspoon ground turmeric
1/2 teaspoon fenugreek seeds
1 cinnamon stick
400ml coconut milk
1 lime, juiced
1 teaspoon salt

Method

  1. Pop the onion, chillies, garlic, curry leaves, turmeric, fenugreek seeds and cinnamon in a saucepan along with 150ml water. Bring to the boil, then cover and simmer for 5 minutes.
  2. Add the coconut milk and stir on a medium heat for 2–3 minutes, making sure that it heats through but does not boil.
  3. Add the lime juice and salt to taste and serve with string hoppers.
