Ingredients

Quantity Ingredient
4 sprigs coriander
4 sprigs parsley
4 sprigs thyme
4 sprigs chervil
4 sprigs mint
4 sprigs tarragon
12 chives
4 tablespoons olive oil
1/2 lemon, juiced
1 tablespoon balsamic vinegar
12 cherry tomatoes
4 slices wholemeal bread
1 fresh goat’s cheese
salt
pepper

Method

  1. Destalk the fresh herbs and snip them. Mix with the olive oil, lemon juice and balsamic vinegar to make the salsa verde. Quarter the tomatoes. Spread the slices of bread with goat’s cheese. Top with the tomatoes and add 1 tablespoon of salsa. Season with salt and pepper before serving.
