Ingredients

Quantity Ingredient
3 small tomatoes
or 2 medium tomatoes
1 small cucumber
4 slices artisan country bread
4 tablespoons baba ganoush
4 sprigs mint
4 teaspoons olive oil
salt
pepper

Method

  1. Cut the tomatoes into 16 wedges and the cucumber into thin slices. Spread the slices of bread with the baba ganoush. Top with the cucumber rounds, then the tomato wedges, and sprinkle with snipped mint. Drizzle with olive oil and season with salt and pepper before serving.
