Creamed haricot beans & sun-dried tomatoes

Ingredients

Quantity Ingredient
100g soft cheese
150g white haricot beans, cooked
2 tablespoons olive oil
salt
pepper
4 slices wholemeal bread
12 basil leaves
12-16 sun-dried tomatoes, marinated in oil
4 pinches cayenne pepper

Method

  1. Blend the soft cheese with the haricot beans, olive oil and 1 pinch of salt and pepper. Spread the slices of bread with this mixture. Snip the basil. Top with the sun-dried tomatoes and add the snipped basil. Sprinkle with cayenne pepper before serving.
