Ingredients

Quantity Ingredient
1 garlic clove
1 small piece ginger
4 sprigs parsley
4 sprigs coriander
4 tablespoons double cream
1 tablespoon olive oil
1/2 lemon, juiced
salt
pepper
4 slices wholemeal bread
8 small button mushrooms

Method

  1. Peel and chop the garlic and ginger and snip the parsley and coriander. Combine the cream with the olive oil, lemon juice, garlic, ginger, salt and pepper. Add the snipped herbs, setting aside a couple of pinches. Spread the slices of bread with the mixture. Cut the mushrooms into small chunks and place on the bread. Sprinkle with the remaining snipped herbs.
