Tapenade, tomato & goat’s cheese

Ingredients

Quantity Ingredient
1 large heirloom or beef tomato
4 tablespoons tapenade
4 slices artisan country bread, toasted
1 small fresh goat’s cheese
1 small bunch thyme
4 large basil leaves
2 tablespoons olive oil
pepper

Method

  1. Slice the tomato width-wise. Spread each slice of toast with 1 tablespoon of tapenade, then top with the tomato slices. Add small chunks of goat’s cheese. Destalk the thyme leaves and snip the basil, then sprinkle over the toasts. Drizzle with olive oil and season with pepper before serving.
