This dessert, also known as ‘Monte Bianco’ in Italian, is made to look like a snow-capped mountain, specifically Mont Blanc in France. Make this just before serving, so the meringue stays crunchy.

Ingredients

Quantity Ingredient
125g ginger nut biscuits
300ml thickened cream
1 1/2 teaspoons natural vanilla extract
40g ready-made meringue nests
200g ready-made sweetened chestnut jam, (see note)
4 chocolate curls or chocolate shavings, optional

Method

  1. Place the biscuits into the bowl of a food processor and process for about 40 seconds, or until you obtain a sand-like consistency.
  2. With adult help: Turn the processor off at the power outlet and remove the processor blade. Using a spoon, divide the biscuit ‘rubble’ equally between four dessert glasses.
  3. Place the cream and vanilla in the bowl of an electric mixer and whip it on high until soft peaks form, about 40 seconds. Using clean hands, crumble two meringue nests into the mixture and stir to combine well. Set aside.
  4. Evenly dollop the chestnut jam in each of the glasses, followed by the cream and meringue mixture. Crumble the remaining meringue over the top and garnish with a chocolate curl or chocolate shavings, if you like. Enjoy immediately!

Note

  • Sweetened chestnut jam comes in cans or jars and can be found in Italian supermarkets or gourmet food stores.
