Fried rice is one of the most popular Asian dishes. I like to serve it in noodle boxes, which are available from party stores. If you like bacon, add a cup of crispy bacon bits when heating the ingredients at the end.

Ingredients

Quantity Ingredient
4 tablespoons sesame oil
3 small carrots, peeled and grated
3 small zucchinis, grated
3 spring onions, thinly sliced
3 eggs, well beaten
3 cups cooked, cooled jasmine rice, (1 cup uncooked)
1 cup crisp fried bacon bits, (optional)
3 tablespoons soy sauce, to serve

Method

  1. Measure 2 tablespoons of the sesame oil into a wok. Ask a grown-up to help you heat the wok over a medium heat. Add the carrots, zucchini and spring onions and carefully stir them around in the wok so they don’t stick. Cook the vegetables for around 15 minutes, or until they have completely softened, stirring them from time to time. Ask a grown-up to tip them into a large mixing bowl.
  2. Measure out another tablespoon of oil and ask a grown-up to add it to the hot wok. Make sure you stand back from the stove in case the oil splatters. Ask a grown-up to swirl the oil around in the wok, before adding half of the beaten egg. Quickly swirl the egg around the wok so that it looks like a thin, round pancake. Cook the pancake for 1–2 minutes then flip it over to cook on the other side. When cooked, ask a grown-up to carefully slide the pancake onto a chopping board. Repeat with the remaining oil and egg.
  3. When the pancakes have cooled slightly, roll them into thin ‘sausages’ and ask a grown-up to help you slice them thinly so they look like little swirls.
  4. Ask a grown-up to heat the wok again over a medium heat and then to add the rice and vegetables. The bacon should be added now as well, if you are using it. Mix all the ingredients together well, and cook until piping hot.
  5. To serve, measure 1 cup of fried rice into each noodle box or onto plates. Top with some of the sliced pancake and a little soy sauce. For fun, eat with a bamboo fork or chopsticks!
