In true Italian style, this dish is best eaten with your hands and crusty bread. It will be a bit messy but that’s part of the fun!

Ingredients

Quantity Ingredient
3 medium ripe tomatoes, cored and cut into eighths
1/2 small onion, very finely sliced
3 tablespoons olive oil
1/2 teaspoon salt
1/2 loaf casalinga bread, (or any crusty sourdough)

Method

  1. In a large mixing bowl, combine the tomatoes and onion. Pour on the oil and add the salt. Use the salad servers to mix everything together very well. Make sure there are no big clumps of onion left in the salad. The more you stir, the more juice your tomatoes will release. Leave the salad to sit for about 10 minutes before serving.
  2. Use a serrated bread knife to cut the bread into 1 cm slices.
  3. To serve, spoon some tomato salad onto each plate and drizzle with some of the tomatoey juices. Serve with slices of bread for dipping and mopping.

Variations

  • For a change, you can add a scattering of yellow pear tomatoes or cherry tomatoes to this dish.

    Serve a little bowl of shaved parmesan with this salad so that everyone can sprinkle a little cheese onto their portion. But only do it at the last minute or the cheese will go soggy.
