These fritters are a great way to use up left-over rice. My mum used to make round fritters, but I think the star shapes look lovely.

Ingredients

Quantity Ingredient
2 cups cooked short-grain white rice
4 tablespoons plain flour
2 eggs
1/3 cup orange juice
1 tablespoon vanilla-bean paste
1 tablespoon grated orange zest
2 teaspoons grated lemon zest
1/3 cup vegetable oil, plus a little for greasing
1 1/2 tablespoons caster sugar

frying pan
4 star-shaped pancake rings, (optional)
measuring cups
paper towels

Method

  1. Combine the rice and flour in a mixing bowl.
  2. Combine the eggs, orange juice, vanilla and orange and lemon zests in another bowl and whisk them together well. Ask a grown-up to help you tip this egg mixture onto the rice and stir until well combined.
  3. Add the oil to the frying pan and ask a grown-up to help you heat it over a low heat.
  4. While the pan is heating, brush a little more oil inside the pancake rings. Put the pancake rings into the pan and allow them to heat for 1 minute.
  5. Ask a grown-up to help you spoon some of the rice batter into each pancake ring, filling them about halfway full. If you don’t have pancake rings, just dollop a spoonful of the batter directly into the pan so that it forms a round pancake. Cook for 1 minute then use an egg flip to gently hold the fritter in place while lifting the pancake ring up and away from the pancake. Ask a grown-up to help you with this.
  6. Ask a grown-up to help you turn the fritters over and cook them for another minute on the other side. Lift the fritters out of the pan onto paper towel to drain. Cook the rest of the batter to make more fritters.
  7. Lift the fritters onto a warm serving platter and sprinkle with caster sugar before serving.
