A chipotle barbecue sauce is a storecupboard staple in the Hang Fire house. When you want a sauce with a sweet, spicy and smoky kick, this is the one to reach for.

Ingredients

Quantity Ingredient
1 tablespoon olive oil
1/2 small onion, roughly chopped
2-3 garlic cloves, very finely chopped
185g ketchup
60ml pineapple juice
90g honey
45g dark brown sugar
2 tablespoons blackstrap molasses
3 dried chipotle peppers, soaked in warm water until softened
1 tablespoon worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon english mustard powder
1 teaspoon chilli powder
splash bourbon or whisky

Method

  1. Heat the olive oil in a large pan over medium heat, add the onions and garlic, and cook for about 10 minutes until soft and golden. Reduce the heat to low and add all the remaining ingredients. Cook, stirring occasionally, for 8–10 minutes to give the flavours a chance to combine.
  2. Pour everything into a food processor and blitz until smooth. (It’s a good idea to cover the top of the food processor with a tea towel and pulse one or two times before blending to avoid splattering.) If you want the sauce extra-smooth, press it through a fine-mesh sieve using the back of a spoon or a rubber spatula. Store in an airtight container in the fridge for up to a few weeks. Slather on everything and anything.
