You know what I love? Brownies. And the recipe below is the ULTIMATE brownie batter. Why garbage brownies? These brownies will take whatever garbage you want to throw at them, and they will still bake beautifully and turn out like heaven. The cocoa-based batter is so easy-going, and bakes up into a chewy, rich, dense masterpiece no matter what you do to it. As if you needed any more encouragement, you probably already have all the ingredients in your cupboard.

Ingredients

150g butter
285g caster sugar
90g unsweetened cocoa powder
1 teaspoon vanilla bean paste
pinch sea salt
2 eggs
50g plain flour
whatever extra mix-ins you want!

Method

  1. Preheat the oven to 160°C. Grease and line a 20 cm square tin with baking paper, letting the paper overhang the sides of the tin.
  2. Melt the butter in a large saucepan over medium heat. Take the pan off the heat and add the sugar and cocoa, stirring until there are no lumps. Add the vanilla, salt and eggs and stir again until everything is combined. Finally add the flour, stir until combined then continue beating vigorously with a wooden spoon for about 30 seconds until the mixture comes together in a smooth, shiny batter. If it looks separated or greasy, keep beating until it comes together.
  3. For standard, chewy, gooey chocolate brownies, scrape the batter into the tin and bake for 20 minutes. But if you want to get creative with mix-ins now’s the time! There are no bad choices here – throw in any nuts, candy, berries, fruit, seeds or other goodness that your heart desires, and then proceed to scrape the batter into the tin and bake as above. Cool in the tin, then slice into 16 pieces. They keep well for up to a week in an airtight container.
