S’mores brownies contain cookie, chocolate and toasted marshmallow – all crammed into brownies. The base is buttery, the centre is chewy and delicious and the marshmallows are just as toasty as they ought to be. The awesomeness of these brownies needs no further explanation. But please, no coloured marshmallows. It’ll look like a unicorn threw up on your brownies.

Ingredients

Quantity Ingredient
250g butternut snap cookies, (or digestives or graham crackers)
50g butter, softened
1 batch Garbage brownies
90g vanilla mini-marshmallows
or 90g vanilla marshmallows

Method

  1. Preheat the oven to 160°C and grease and line a 20 cm square tin with baking paper, letting the paper overhang the sides of the tin.
  2. Blitz the cookies and butter in a food processor until they form a fine, sandy crumb.
  3. Press the mixture firmly into the tin. Pour over the batter, then scatter over the mini-marshmallows. Bake for 25 minutes, then leave to cool completely in the tin before lifting out and cutting into squares.

Tip

  • To get a clean cut out of this gooey, marshmallow-topped brownie, use a large sharp knife and rinse it in hot water between cuts.
