I know this isn’t a traditionally Christmassy recipe, but it’s my boyfriend’s favourite thing, so I make it pretty much every year. And, OK, I happen to love it too. The secret joy of this recipe is the ribbons of chocolate between the layers. At the edges, the chocolate firms up to form little crispy bits, and in the centre it melts with the cookies and cream to form a ganache-like texture. Plus, it just looks so majestic – all those gorgeous layers and snowy peaks … can someone please pass me a spoon?

Ingredients

Quantity Ingredient
2 large eggs
115g caster sugar
500g mascarpone
125ml thickened cream, (35% fat)
150g dark chocolate, (70% cocoa solids)
1 tablespoon coconut oil
500ml strong brewed coffee
a swig booze – rum, marsala, frangelico or brandy are all great, (optional)
300g savoiardi biscuits, (sponge fingers/lady fingers)
unsweetened cocoa powder, to dust

Method

  1. Separate the eggs and put the yolks in a large mixing bowl with the sugar. Whisk together until very pale. Add the mascarpone and cream and stir together until incorporated.
  2. In a separate bowl, whisk the egg whites to stiff peaks.
  3. Melt the chocolate and coconut oil together in a heat-safe bowl in the microwave, in 20-second bursts on High (100%), stirring well after each burst.
  4. Stir together the coffee and booze, if using, in a shallow bowl. Begin dipping half the savoiardi biscuits into the coffee and placing them in one layer in the bottom of a large serving dish. Drizzle over half the chocolate mixture, spreading to create a thin layer.
  5. Fold the egg whites into the mascarpone mixture, then pour half of this over the chocolate.
  6. Repeat the layers using the remaining savoiardi biscuits, coffee, chocolate and mascarpone until the dish is full. Dust the top layer generously with cocoa powder and then put in the refrigerator to set for at least 6 hours or overnight.
