Brown rice pudding with roasted strawberries

Excuse me while I get on down to comfort-food town. The magic of this brown rice pudding is that it soothes and salves your ills in the way that only carbs can, and yet it feels healthy and virtuous at the same time. I don’t think comfort-eating is something to feel bad about. In fact, I think of all food as comfort food. But it’s a rare and beautiful thing when a dish is so nursery-level soothing, and yet full of fibre and fruit at the same time. Let’s wrap ourselves in blankets and eat this for breakfast, please.

Ingredients

Brown rice pudding

Quantity Ingredient
500ml almond milk, (unsweetened)
500ml milk
1 litre water
200g brown rice
2 tablespoons caster sugar
2 tablespoons brown sugar
2 teaspoons vanilla bean paste
pinch salt

Roasted strawberries

Quantity Ingredient
500g strawberries, washed and hulled
2 tablespoons caster sugar
flaked almonds, to serve (optional)

Method

  1. Put all the ingredients for the brown rice pudding in a large saucepan over medium heat and stir to combine. Bring to the boil, reduce the heat to low and simmer, stirring occasionally, for about an hour, or until the mixture thickens and the rice is cooked through. The rice will look like a soupy mess for the longest time, but it will come together at the end. It’s a labour of love.
  2. Preheat the oven to 200°C.
  3. While the rice is cooking, slice the strawberries in half and toss them in a shallow roasting dish with the sugar. Leave them to macerate for at least 10 minutes.
  4. Roast the berries for 10 minutes.
  5. Serve the rice pudding in bowls with plenty of the roasted strawberries and some flaked almonds, if using.
