If you are a fan of chocolate, please meet your new best friend. I know this might seem like faux-food – dates and cocoa powder pretending to be brownies or something. But it’s not, I swear. It just tastes good. The caramel taste and texture of the dates with the savoury pecans, the bitter cocoa and smoky maple syrup; all these things combine to make something so much greater than the sum of its parts. It’s like the cartoon characters, Earth, Fire, Wind, Water, Heart – their powers combine to summon Captain Planet! But in this case, you don’t get an ice-blue super hero, you get fudge.

Ingredients

Quantity Ingredient
300g pitted dates, (pitted medjool dates are great, but regular dates work perfectly)
200g pecans
2 tablespoons unsweetened cocoa powder
2-4 tablespoons maple syrup
1/2 teaspoon sea salt flakes

Method

  1. Line a 20 cm square baking dish with baking paper.
  2. Put the dates and pecans in the bowl of a food processor and process until the mixture begins to look like breadcrumbs. Stop the processor and add the cocoa, as well as 2 tablespoons of the maple syrup and the sea salt. Process again until the mixture changes colour and begins to clump together. Carefully taste a small amount. If you would like it to be sweeter, you can add the rest of the maple syrup. Give the mixture a final pulse.
  3. Pour the mixture into the lined dish and press it in. Place in the refrigerator for 2–3 hours to firm up. Slice into small squares and eat!

Tip

  • This mixture can also be rolled into 2 teaspoon-sized balls and tossed in cocoa powder to make a completely delicious raw truffle.
