Ingredients

Quantity Ingredient
150g hazelnuts
1/2 cup caster sugar
4 figs, halved lengthwise
hazelnut ice-cream, to serve

Method

  1. Preheat the oven to 160°C. Roast the hazelnuts on a baking tray for 10 minutes, or until fragrant. Rub the hazelnuts in a clean tea towel to remove the skins, then roughly chop them.
  2. Place a frying pan over high heat. Sprinkle the sugar over the base of the hot pan and place the figs, cut-side down, on top of the sugar. Cook the figs for 1–2 minutes, or until they start to caramelise (they will start to smoke a little). Turn the figs and cook for 1–2 seconds.
  3. Place the figs on serving plates and serve immediately, with the hazelnut ice-cream and chopped hazelnuts.

Note

  • The figs should be perfectly ripe for this recipe.
