Chargrilled chicken with green chillies and tomato

Ingredients

Quantity Ingredient
500g chicken thighs
3 tablespoons olive oil
1 lemon, juiced
sea salt
freshly cracked black pepper
4 tomatoes
4 long green chillies
flatbread, to serve

Sumac and parsley salad

Quantity Ingredient
1 red onion, thinly sliced
2 tablespoons sumac
2 handfuls flat-leaf parsley, chopped

Method

  1. Mix the chicken with the olive oil and lemon juice in a bowl and season with sea salt and black pepper. Cover and marinate in the refrigerator for 1 hour.
  2. To make the sumac and parsley salad, sprinkle the onion with the sumac and parsley. Using your hands, crush the ingredients together.
  3. Cut the tomatoes into wedges and sprinkle with sea salt. Chargrill the chicken on a barbecue for 5–10 minutes, or until browned and cooked through. Cook the tomatoes and chillies until soft.
  4. Arrange the chicken, chillies and tomatoes on a platter. Invite your guests to fill the flatbread with the chicken, chillies, tomatoes and sumac and parsley salad.

Note

  • You can also pan-fry the chicken, tomatoes and chillies in olive oil.
