Fresh borlotti beans with tomato

Ingredients

Quantity Ingredient
250ml olive oil
2 onions, diced
1kg shelled fresh borlotti beans
500g tomatoes, peeled and diced
sea salt
freshly cracked black pepper
125ml extra-virgin olive oil
1/2 lemon, juiced
crusty bread, to serve
lemon wedges, to serve

Method

  1. Heat the olive oil in an earthenware pot or heavy-based saucepan. Cook the onion over medium heat for 10–15 minutes, or until soft but not browned.
  2. Add the borlotti beans and tomato to the pan. Season with sea salt and black pepper. Reduce the heat to low, cover and cook for 1 hour, or until the beans are soft. Stir after 30 minutes and add a little water or chicken stock if the beans are drying out.
  3. Pour the extra-virgin olive oil and lemon juice over the borlotti beans. Serve hot or cold with crusty bread and lemon wedges.
