Ingredients

Quantity Ingredient
250g dried chickpeas
3 garlic cloves, crushed
80ml tahini
1 lemon, juiced
sea salt
125ml extra-virgin olive oil

Method

  1. Soak the chickpeas in water for 8 hours. Drain and rinse, then place in a saucepan and cover with cold water. Bring to the boil and cook for 1 hour, or until soft. Drain and rinse well.
  2. Blend the chickpeas, garlic, tahini, lemon juice and salt in a food processor, gradually drizzling in the olive oil. Blend in a little more lemon juice or some hot water if the hummus is too thick.

Note

  • Boiling your own chickpeas will give the hummus a much better texture and flavour than using canned chickpeas.
