If fresh anchovies are not available, you can use fresh sardines in this recipe. Serve them with salad and some lovely crusty bread.

Ingredients

Quantity Ingredient
500g fresh anchovies
75g plain flour
125ml sunflower oil
lemon wedges, to serve
Parsley & red onion salad, to serve

Method

  1. Gently scrape any scales off the anchovies. To gut them, open the belly using a sharp knife, then scrape out the intestines. Dry the anchovies completely, using paper towel.
  2. Put the flour on a plate or in a bowl and toss the anchovies in the flour. Season with sea salt.
  3. Heat the oil in a deep heavy-based frying pan. When the oil is hot, fry the fish over high heat for about 2 minutes on each side, until crispy.
  4. Serve hot, with the salad and crusty bread.
