Turkish people love their eggplant, in myriad ways — fried, sautéed, smoked, stuffed, baked. It is said that Turks have over 200 different ways with eggplant. Here is another one, the famous ‘Sultan’s delight’: lamb served on a bed of smoked eggplant cream.

Ingredients

40g butter
2 tablespoons olive oil
2 onions, diced
500g boned lamb shoulder, cubed
500g tomatoes, diced
2 long green chillies, chopped
2 garlic cloves, chopped
2 tablespoons tomato paste
15g chopped flat-leaf parsley

Smoked eggplant cream

Quantity Ingredient
1kg Charred eggplant
1 lemon, juiced
80g butter
35g plain flour
375ml warm milk
60g grated cheddar cheese

Method

  1. Heat the butter and olive oil in a heavy-based saucepan. Sauté the onion over medium heat for 5 minutes, or until golden. Increase the heat to high, add the lamb and cook, turning, for 5 minutes, or until browned on all sides.
  2. Stir in the tomato, chilli, garlic, tomato paste and 125 ml hot water. Bring to the boil, then reduce the heat, cover and simmer for about 1 hour, or until the lamb is tender, adding a little extra water if the mixture becomes dry.
  3. While the lamb is cooking, prepare the eggplant cream. Peel the charred eggplants and place the flesh in a colander. Add the lemon juice and mash the flesh with a fork. Set aside and allow the juices to drain.
  4. Melt the butter in a heavy-based saucepan. Add the flour and cook, stirring, over medium heat, for 2–3 minutes, to make a smooth roux. Add the warm milk and stir until smooth.
  5. Stir in the eggplant, season with sea salt and freshly ground black pepper and cook for a further 5 minutes. Stir in the cheese, remove from the heat and leave to cool.
  6. Spread some eggplant cream over warm serving plates and pile the lamb in the centre. Serve immediately, sprinkled with the parsley.
