Red cabbage salad

This salad can be made a few hours ahead and is a wonderful accompaniment to barbecued dishes.

Ingredients

Quantity Ingredient
1 baby red cabbage
2 tablespoons apple cider vinegar
2 garlic cloves, crushed
125ml extra virgin olive oil
1 carrot, grated
60g good-quality mayonnaise
15g chopped flat-leaf parsley

Method

  1. Remove and discard the outer leaves of the cabbage. Very thinly slice the cabbage and place in a large bowl.
  2. Add the vinegar, garlic, olive oil and a good pinch of sea salt. Toss together, then cover and set aside for 15 minutes.
  3. Add the carrot and mayonnaise and fold together. Serve sprinkled with the parsley.
