Turks like their salad ingredients chopped into bite-sized pieces. Just a bowl of green salad all chopped up together, or a salad of red onion, tomato, cucumber and green peppers. They eat salads as a complement to meals all throughout the day — breakfast, lunch and dinner.

Ingredients

Quantity Ingredient
250g bunch of rocket
60ml extra virgin olive oil
pinch sea salt
1 lemon, juiced
1 small red onion, thinly sliced
2 small carrots, finely grated

Method

  1. Trim any tough stalks from the rocket, then wash the leaves and drain. Mix the olive oil, salt and lemon juice together and set aside.
  2. Put the onion and carrot in a serving bowl. Finely chop the rocket and add to the bowl with the lemon dressing. Toss together and serve at room temperature, with fish, meat or chicken dishes as desired.
  3. The more peppery the rocket, the happier your liver. And hey, with all the vitamin A in the carrots, your eyes will be happy too!
