Nettles are very common in Scandinavian countries. The fresh leaves are often used to make a traditional soup served with boiled eggs, while the best pizza I have ever had in Stockholm was a pizza bianca topped with fresh nettles. Rich in vitamins A and C, the dried leaves can be used in many preparations – the recipe below makes a nutrition-filled energy ball perfect for snacking.

Ingredients

15g dehydrated raspberries or strawberries
140g rolled oats
200g soft dried figs
75g ground almonds
2 teaspoons honey
1/2 teaspoon dried nettle powder
1/2 teaspoon ground cinnamon
115g hemp seeds

Method

  1. Put the dried berries in a food processor or spice grinder and blend briefly to form a fine powder. Set aside.
  2. Add all the ingredients, except for the hemp seeds and the berry powder, to the food processor and pulse together, gradually adding 5–6 tablespoons of water, until the mixture comes together and resembles a sticky dough.
  3. Mix together the berry dust and hemp seeds in a bowl, then scatter the mixture evenly over a plate. Fill a small bowl with water.
  4. Roll the dough into walnut-sized balls, then dip the balls into the water before rolling in the hemp seed and berry dust mixture. They should keep for up to 1 week in a sealed container.
