I remember snacking on a processed version of this at primary school. It was delicious but so sweet and bad for you! I love how the reduction and drying concentrates the flavour of the berries and I’ve always loved balsamic with strawberries. You could apply the below recipe to any fruit you find stacking up in your kitchen, just make sure to pass it through a sieve first so you end up with a smooth pulp.

Ingredients

750g strawberries, fresh or frozen
165g raw sugar
1 tablespoon best-quality balsamic vinegar

Method

  1. Preheat the oven to 100°C. Line a large baking sheet with non-stick baking paper.
  2. Put the strawberries and sugar in a food processor or blender and whiz together to form a smooth purée, then strain the mixture through a fine-mesh sieve into a large heavy-based saucepan.
  3. Bring the purée to a boil, then lower to a simmer and cook over a medium–low heat, stirring occasionally, for 45 minutes to 1 hour, or until the mixture has thickened and reduced to about 250 ml and stands in ribbons if poured over itself.
  4. Gently stir the balsamic vinegar through the hot purée so that it is not entirely incorporated but rather marbles the mix, then pour the purée onto the centre of the prepared baking sheet. Spread it out as evenly as possible into a 30 cm x 40 cm rectangle using a spatula.
  5. Transfer the purée to the oven and leave to dry for 2–3 hours – the fruit leather will be ready when it no longer sticks to your fingers but is still slightly tacky. Remove the baking tray from the oven and leave to cool and dry completely, this will take at least 3 hours and up to 24.
  6. Once dry, place a sheet of baking paper over the fruit leather, then peel it away from the non-stick paper and roll it up in the new sheet. Keep the rolled fruit leather in a sealed food bag or container for up to 1 month.
