Oysters, apple cider granita & liquorice

Denmark’s affinity with liquorice gets a proper mention in the Sweets chapter, but its pairing with salt is likely to seem baffling until you’ve tried it. Here it combines with the true taste of the sea, the oyster, along with the delightfully refreshing sweetness of an apple cider and cucumber granita. It is an unusual and winning combination that is incredibly refreshing on a hot day.

Ingredients

Quantity Ingredient
500ml apple cider
1 telegraph cucumber, peeled, halved lengthways and seeds removed
1 tablespoon liquorice powder, to taste
24 oysters
rock salt, to set the oysters on

Method

  1. To make the granita, blend the cider and cucumber together. Transfer to a shallow 30 cm x 20 cm dish and freeze for at least 4 hours.
  2. Half an hour before serving, let the granita sit at room temperature for 5 minutes, then, using a fork, pull through the top half of the ice to turn it into ‘snow’. Return to the freezer for 10 minutes, then repeat.
  3. Open the oysters, top with a spoonful of the granita and sprinkle over the liquorice powder, to taste. Serve on a bed of wet rock salt.
