A crisp, refreshing radish eaten on its own, or dipped in a little salt, is one of nature’s simple pleasures. But paired with sweet honey and this salty, spiced butter it makes for a real treat.

Ingredients

Quantity Ingredient
1 teaspoon celery seeds or fennel seeds
1 tablespoon sea salt flakes, plus extra to serve
100g unsalted butter, at room temperature
400g fresh radishes
80ml honey

Method

  1. Lightly toast the seeds in a non-stick frying pan over a low heat for a couple of minutes, until they have darkened in colour and give off a nutty fragrance. Remove from the heat and grind with the salt using a mortar and pestle. Combine with the butter in a small bowl.
  2. Serve the radishes with the butter and honey for dipping and sprinkle with a little extra salt.
