I love to eat simply grilled beef fillet with a purée of potatoes and a peppery rocket salad. Crème fraîche spiked with freshly grated horseradish and hot English mustard is also a delicious condiment to serve on the side. Ask your butcher for a really good piece of fillet – look for an intense, deep red colour and an even marbling of fat through the meat.

200g sea salt
2 tablespoons freshly ground black pepper
a little vegetable oil, for oiling
1kg prime fillet of beef
2 tablespoons extra virgin olive oil
1 lemon, juiced

Method

  1. Sprinkle the salt and pepper on a small baking tray to make an even layer, about 5mm thick. Set the tray aside, close to the hob.
  2. Preheat a griddle or heavy-based non-stick pan and oil very lightly. Cut the beef fillet into 4 thick slices and place on the hot griddle. Cook, without moving for 4 minutes, then turn and cook on the other side, undisturbed, for 4 minutes.
  3. Carefully remove the meat and place on the salt-encrusted tray. Turn the meat once so the seasoning coats both sides, then allow to rest for 15 minutes. (This resting stage is very important – don’t skimp on it).
  4. Return the salt-encrusted steaks to the griddle and cook for a further 1 minute on each side for medium to rare meat. Lift the meat back on to the tray and allow to sit for another 2–3 minutes.
  5. Transfer the beef to a board, drizzle with the extra virgin olive oil and squeeze over the lemon juice. Cut into generous slices and arrange on warm plates. Serve with the horseradish cream and accompaniments.
