I love ice cream – primarily because I really enjoy making it, which we do almost everyday of the year at the restaurant. More often than not, our ices are fruit based but occasionally we make this chocolate ice cream. It took quite a few attempts to get it right because I wanted something very rich and luxurious, yet a custard base will only take so much chocolate before it refuses to freeze.

Ingredients

150ml whole milk
350ml double cream
1 vanilla pod, split lengthways
60g good-quality dark chocolate (minimum 64% cocoa solids)
6 organic free-range egg yolks
120g caster sugar
2 tablespoons unsweetened cocoa powder

Method

  1. Pour the milk and cream into a heavy-based saucepan, add the vanilla pod, place over a medium heat and bring to the boil. Chop the chocolate into rough chunks, add to the hot creamy milk and stir once or twice to encourage it to melt.
  2. While the chocolate is melting, beat the egg yolks and sugar together in a bowl for a minute or so until thick and pale. Sift the cocoa powder over the surface and stir to combine. Pour on the hot cream, whisking as you do so, then pour back into the pan.
  3. Turn the heat to very low and stir, using a figure-of-eight motion, until the custard thickens. You’ll need to be patient as this will take 8–10 minutes. Don’t be tempted to rush the process by turning up the heat as it may cause the custard to curdle. As soon as the custard is thick enough to lightly coat the back of a wooden spoon, remove from the heat and strain through a fine sieve into a bowl.
  4. Allow to cool completely, then pour the custard into your ice-cream maker and churn until thickened. When it is ready, freeze in a suitable container. The ice cream will be ready to eat in a couple of hours and will keep well for a day or so, but no longer. Homemade ice cream is better eaten relatively soon after it has been made. Spoon into chilled bowls to serve.
