Method

  1. If you want to try making a curd cheese similar to ricotta, try the following method. Add 3 drops of lemon juice to 3 litres full-fat milk and leave in a cool place (not the refrigerator) for 36 hours. Place the acidulated milk in a large pan with 250 ml plain yoghurt and bring to boiling point for 1 minute. As the milk boils, scoop out the curds and drain in a colander or sieve. This simple curd makes nice dumplings when mixed with eggs, breadcrumbs and grated cheese and cooked in a tomato sauce.
