Ingredients

Quantity Ingredient
1 garlic clove, roughly chopped
25ml red wine
1kg pork mince
15g salt
3g coarsely ground black pepper
pinch freshly grated nutmeg
pinch ground cinnamon

Method

  1. Put the garlic and wine into a glass and leave to infuse for 2 hours. Pour through a fine strainer, reserving only the wine.
  2. Place the remaining ingredients in a large bowl and use your hands to mix together thoroughly. Add the garlic-infused wine and mix again. Divide the mixture into 5 portions and roll each out to a small sausage shape. Wrap in clingfilm like a small salami and refrigerate until needed.
