Sardine sauce with onions

Ingredients

Quantity Ingredient
2 tablespoons butter
2 tablespoons extra-virgin olive oil
4 large brown onions, finely sliced
4 garlic cloves, finely chopped
8 salted sardines, filleted and washed
salt and pepper, to taste
400g spaghetti
4 tablespoons flat-leaf parsley, coarsely chopped
grana padano cheese, freshly grated, to taste

Method

  1. Melt the butter and olive oil in a pan and slowly cook the onions and garlic until very soft. You may need to add water or more olive oil as you go. When the mixture is very soft and a light golden brown, stir in the sardines. Season with salt and pepper to taste.
  2. Cook the spaghetti in plenty of boiling salted water until al dente and drain well. Add the sauce and toss well. Serve with a sprinkling of parsley and cheese to taste.
