I am particularly fond of soft-baked fennel. This dish is perfect to accompany a pork roast, and is especially good with slow roasted pork belly.

Ingredients

Quantity Ingredient
3 large fennel bulbs
3 pieces star anise
chicken stock, well seasoned

Method

  1. Preheat the oven to 180°C.
  2. Trim the fennel bulbs and cut them in half lengthwise. Remove the hard core and cut into long slices. Blanch in hot water till they are soft. Pack the slices in a baking dish and scatter on the star anise. Pour on a little stock and cover with foil. Bake for 30 minutes, then remove the foil and bake until the surface turns crisp and brown.
