The sight of green beans in a bowl with cherry tomatoes, all drenched in the freshest olive oil, is a very happy one. This is a simple summer salad that can become almost a meal in itself when served with some crusty bread. It is also the perfect accompaniment to lamb chops, marinated in a little fresh rosemary.

Ingredients

Quantity Ingredient
500g small green beans, trimmed
2 punnets cherry tomatoes
1 garlic clove, shaved at the last minute
extra-virgin olive oil
salt flakes

Method

  1. Cook the beans in plenty of boiling water until just tender, drain well and plunge into cold water to cool. Place the beans in a large bowl with all the remaining ingredients and toss to combine.
