Ingredients

Quantity Ingredient
1 1/2 tablespoons good olive oil
1 brown onion, peeled and chopped
1 garlic clove, chopped
400g tinned italian tomatoes
or 400g ripe fresh roma tomatoes, chopped
salt and pepper
a handful basil or flat-leaf parsley

Method

  1. To make the tomato sauce, heat the olive oil in a pan and sauté the onion and garlic until they soften and colour lightly. Add the tomatoes and cook for around 30 minutes. Taste, and season with salt and pepper. Towards the end of the cooking time add the basil.
