Elderflower snaps made with vodka or gin

Ingredients

Quantity Ingredient
6-8 elderflower heads
1 lemon
1 tablespoon caster sugar
70ml vodka or gin

Method

  1. Trim any large bits of stem from the elderflower and discard any brown flowers (or bugs!). Place in a large sterilized jar. Peel the lemon with a small paring knife, avoiding any white pith. Add the peel to the flowers along with the sugar. Pour over the vodka or gin, seal the jar and shake to dissolve the sugar.
  2. Place in a cool, shady spot for a week, tipping the jar upside down every time you walk by or remember. Sieve the snaps and serve neat with lots of ice or with tonic water and a slice of lime for a refreshing take on a G&T.
