Almond skyr with grilled peaches & lemon balm

Ingredients

Quantity Ingredient
2 peaches or nectarines, halved and stoned
2 teaspoons butter
300g skyr or greek yogurt
2 tablespoons ground almonds
vanilla paste, to taste
few lemon balm or mint sprigs, to serve

Method

  1. Heat a griddle pan for 2 minutes and place the peach halves on top, cut side down. After a minute, flip over and place the butter in the holes. Grill for another few minutes, then transfer to a plate to cool slightly.
  2. Mix the skyr or yogurt, almonds and vanilla together, then divide between 2 bowls.
  3. Top with the peaches and sprinkle over a few lemon balm leaves. Eat while the peaches are still hot.
