While weekends are a more relaxed, casual affair in Sweden, during the week lunchtime acts as a proper pause from work, to be respected and observed, even during busy times. As the working day typically begins quite early, lunch breaks can start before noon, but this is becoming less common as more continental eating and working practices are gradually being adopted.

The preference is for a large, hot meal in the middle of the day and so lunch specials are very common in restaurants and cafés. This typically consists of a main dish, some bread and salad, as well as a drink and/or cup of coffee, and perhaps a cookie if you are lucky. It’s generally a good deal and a great tip for tourists visiting what can be an expensive country. My favourite is crispy fried herring with mash, lingonberries and a cold lättöl (low-alcohol beer – not much fun but good if you’ve got things to do in the afternoon).

Having said that, there is also a growing appetite for lighter, more health-conscious dishes – salads, fish, open-faced sandwiches and soups. The emphasis, however, is always on a proper break and on proper food. It’s about separating yourself from your work and getting away from your desk to feel restored and revived.

The dishes in this chapter are just that. Many are flexible enough to act as sides with leftovers from last night’s dinner and simply need a little salad and chunk of bread to make a full meal packed up for lunch. There are also some options for weekends when there is more time to cook and several could work as a starter or snack, like the open sandwiches or the cod paté.
