Ingredients

Quantity Ingredient
8 lemons, zest finely chopped
8 limes, zest finely chopped
4 oranges, zest finely chopped
2 tablespoons salt

Method

  1. Combine all the zests and spread them over a baking tray lined with baking parchment. Leave in the oven with just the light on for 6 to 8 hours until the the zest is dry and crunchy. Do not turn the oven on. You can also spread the zest on a piece of greaseproof paper and set aside for 24 hours until dry and crunchy. When the zest is dry, add the salt and store in an airtight container.
