30g hulled hazelnuts or blanched almonds
30g pistachio kernels
4 tablespoons sesame seeds
2 tablespoons coriander seeds
2 tablespoons cumin seeds
1 teaspoon black peppercorns
2 teaspoons dried thyme
1 teaspoon mild smoked paprika
1 teaspoon salt

Method

  1. Lightly toast the hazelnuts and pistachios in a frying pan, then place them in the bowl of a food processor. Lightly toast the seeds and peppercorns, then add them to the hazelnuts and pistachios. Add the thyme, paprika and salt to the food processor bowl and blend until you have a coarse mixture. Leave to cool before sprinkling over the finished salad.
