Ingredients

Quantity Ingredient
1 quantity Simple vinaigrette
1 teaspoon balsamic vinegar
2 teaspoons lemon zest, finely chopped
250g cooked grain, such as spelt or pearl barley, drained and rinsed
1 small bunch watercress with largest stalks removed
2 baby beetroots, peeled and grated
salt
pepper
60g roasted walnuts, roughly chopped

Method

  1. Pour 2 tablespoons of vinaigrette into a salad bowl and mix with the balsamic vinegar and lemon zest. Add the grains and watercress and toss to distribute the dressing. Gently incorporate the beetroot then season with salt and pepper to taste. Add more vinaigrette if necessary. Sprinkle the walnuts on top and serve immediately.
