Ingredients

Quantity Ingredient
200g cooked soba noodles
1 dash toasted sesame oil
2 generous handfuls assorted baby salad leaves
100g carrots, grated
90g raw sweetcorn
1 avocado, peeled and cut into chunks
2 spring onions
2 handfuls coriander, snipped
30g sunflower seeds
1/2 tablespoon black sesame seeds
1 quantity Miso & ginger
1 dash lemon juice
salt
pepper

Method

  1. Mix the noodles with the sesame oil to prevent them from sticking. Place them in a large salad bowl with the baby salad leaves, vegetables, coriander and seeds. Pour over enough dressing to coat the ingredients generously. Add a dash of lemon juice, salt and pepper to taste. Serve immediately.
