Ingredients

Quantity Ingredient
2 quantities Simple vinaigrette
2 tablespoons pomegranate molasses
2 teaspoons za’atar
400g grilled aubergines in oil
1 generous handful mint leaves, coarsely chopped
1 coarsely chopped flat-leaf parsley, coarsely chopped
160g labneh or goat’s curd cheese, or more as desired
1/2 the seeds pomegranate

Method

  1. Mix the vinaigrette with the pomegranate molasses and za’atar. Place the aubergines and herbs in a dish then pour over enough dressing to coat them. Add the labneh and sprinkle with pomegranate seeds. Serve immediately.
