Ingredients

Quantity Ingredient
4 tablespoons lemon, Juiced
120ml extra-virgin olive oil
160g pea shoots
160g fresh peas, uncooked
200g cooked smoked ham, diced
pepper
100g pecorino cheese in thin flakes

Method

  1. Combine the lemon juice and olive oil. Arrange the pea shoots, peas and ham in a dish. Pour over enough dressing to coat them, season with pepper and sprinkle with pecorino. Serve immediately.
